Vianderies 2022 Sous Le Vegetal fermented slowly in old oakLes Vianderies is one of the parcels Jean Michel and Laurence Petit work inside Arbois Pupillin, part of seven and a half hectares farmed organically since 2010 and certified from 2012. Every parcel here ferments separately on its own yeasts, and sulphur goes in just before bottling if it goes in at all. This is the bright, tightly drawn side of Jura white rather than the oxidative one: green apple, lemon pith and a chalky saline finish, carried on
